SWEET POTATO BREAKFAST BOWL

Ingredients:
1 small sweet potato
2 tbsp olive oil
2 eggs hardboiled
2 cups kale
1/4 cup avocado
3-4 tbsp salsa
1/4 cup of cheese (goat, feta, or cheddar)
salt and pepperDirections:
