1 small sweet potato
2 tbsp olive oil
2 eggs hardboiled
2 cups kale
1/4 cup avocado
3-4 tbsp salsa
1/4 cup of cheese (goat, feta, or cheddar)
salt and pepper
- Preheat the oven to 400 degrees fahrenheit and toss sweet potato in 2 tbsp of olive oil on a baking sheet. Sprinkle with salt and pepper, and bake for 40 minutes, flipping halfway through.
- While potatoes are roasting, sauté kale in a pan sprayed with avocado oil over medium heat. Stir occasionally until fully wilted and soft.
- Bring a small pot of water to boil and add eggs. Boil for 7 minutes, then run under an ice bath and peel.
- Assemble bowls with kale, potatoes, salsa, and eggs. Top with cheese, and salt and pepper.
