INGREDIENTS:
5 large eggs
5 egg whites
1 cup cottage cheese
1 cup feta cheese
1 cup dairy milk
1 tsp salt
1/2 tsp pepper
1 tsp garlic powder
1 tsp onion powder
Veggies of choice: spinach, cherry Tomatoes
DIRECTIONS:
Preheat the Oven: Preheat your oven to 375 F (190 C). Grease a 9x9-
inch dish or similar-sized baking dish.
1. Prepare the Veggies: Wash and chop the spinach and cherry tomatoes.
Set aside.
2. Mix the Egg Base: In a large mixing bowl, whisk together the 5 large eggs
and 5 egg whites. Add the milk, cottage cheese, feta cheese, salt, pepper,
garlic powder, and onion powder. Whisk until well combined.
3. Assemble the Casserole: Spread the chopped spinach and halved cherry
tomatoes evenly across the bottom of the prepared baking dish. Pour
the egg mixture over the veggies, ensuring an even distribution.
4. Bake: Place the dish in the preheated oven and bake for 30–40 minutes,
or until the center is set and the top is lightly golden. To check
doneness, insert a toothpick or knife into the center; it should come out
clean.
5. Cool and Serve: Let the casserole cool for 5–10 minutes before slicing.
Serve warm as-is or with a side of toast or avocado. It can also be stored
in the fridge for up to 4 days and reheated for a quick breakfast
throughout the week!
